Chocolate nut clusters (3 ways)

These lil’ fellas are great as a snack in themselves or in ice cream such as my Hunky Munky flavor, which is vegan & sugar-free.

Using cacao butter as the base of your chocolate will allow your chocolate to solidify at room temperature, so you do not have to store them in the refrigerator. They are better for traveling and make good gifts since.  If you choose to use the raw chocolate recipe, they will have to be kept in the freezer or fridge.

#1: Ingredients

  • 1 1/2 c. assorted raw nuts, such as pecans, almonds & walnuts
  • 4 Tbsp. cacao butter
  • 1/4 c. cacao powder
  • 2 tbsp. honey or maple syrup for vegan
  • 1/2 tbsp. mesquite powder (optional)
  • 1/2 tsp. vanilla extract
  • Pinch sea salt

OR see raw chocolate option or dark chocolate bar option below. 

Instructions

  1. Roughly chop nuts by hand or pulse in food processor and pour into a medium bowl. Set aside.
  2. In a double boiler, melt cacao butter.
  3. Add the remaining ingredients and mix until smooth.
  4. Pour the chocolate mixture over the nuts and toss until fully coated.
  5. Lay the chocolate nut mixture onto parchment paper and place in the freezer for 15 minutes.
  6. Remove from freezer and break apart.
  7. Store in an airtight container.

#2: Raw chocolate ingredients

  • 1/4 c. cacao powder
  • 1/4 c. coconut oil
  • 2 tbsp. honey or maple syrup for vegan
  • 1/2 tbsp. mesquite powder (optional)
  • 1/2 tsp. vanilla extract
  • Pinch sea salt

Instructions

  1. Roughly chop nuts by hand or pulse in food processor and pour into a medium bowl. Set aside.
  2. Combine all of the chocolate ingredients in a bowl and mix until smooth.
  3. Follow steps #4-#6 above.
  4. Store in an airtight container in the freezer.

  1. Roughly chop nuts by hand or pulse in food processor and pour into a medium bowl. Set aside
  2. Melt favorite chocolate bar, stirring often, using double boiler or in a microwave if you have a fancy one with chocolate setting.
  3. Follow steps #4-6 from first set of instructions.
