Raw vegan chocolate hazelnut ice cream

 

Why don’t we ever refer to anything that combines chocolate and hazelnut as Ferrer Rocher? I think they should also get some cred for the amazing combination of chocolate and hazelnuts. Maybe because you can’t spread it on anything or eat it right out of the jar? Or maybe because Nutella has a consistency like nut butters, so we like to think that it is healthy and relegate the gooey little chocolate balls into the dessert category. Poor guys. Not that I recommend eating this on a regular basis or anything, but when you have a craving that needs to be satisfied, THIS ice cream is the way to go. It packs a punch. An incredibly amazing punch that you stand right back up for hoping for more black eyes and bloody noses. It is AMAZE-

-BALLS.

Ingredients

Makes 4 (super flavor packed) servings

1 c. vegan nutella spread or your preferred store bought brand

2 tbsp. hazelnuts (if you don’t have any leftover, use almond or cashews)

1/4 c. cacao powder

6 pitted medjool dates

4 frozen coconut cream cubes (or regular ice cubes)

1 tsp. hazelnut extract or vanilla extract

1/2 tsp. salt

Note: I have made this ice cream two ways. The first time I froze the nutella and the second time just scooped it from the jar in the fridge. Both times it turned out awesome.

Instructions

  1. Blend all ingredients together on high in high-speed blender, using the tamper to push down the ingredients into the blade.

*If you are not using a high-speed blender, mix all ingredients together minus the frozen coconut cream cubes in a blender or food processor, adding about 1/2 cup coconut (or almond) milk or cream. Blend until smooth. Pour mixture into glass container and mix by hand with whisk or spoon every 30-45 minutes, for approximately 2-3 hours. The best thing about this ice cream is that you can freeze it and it doesn’t need much time to thaw. We love us some instant gratification.

  2. This sounds amazing, Emma! I love nutella & ferrero rocher, but they stopped loving me back years ago… so any chance I can get chocolate and hazelnuts in is awesome 😉
