Fire roasted guacamole


Don’t put away your grills just yet! This past weekend may have been the unofficial end of summer, but the sun is still shining and the nights are still warm. Hold on to summer with one more BBQ, grill fest or dinner party with friends and family. Whip up some of this fire roasted guac to keep your guests from getting hangry at you while they wait for the grillin’ to be done and the eatin’ to start. 

Fire roasted guacamole

4 ripe medium avocados, halved and pit removed
1 tomato, halved
olive oil
1/4 onion, chopped
1 serrano or jalapeño pepper, stems and seeds removed*
juice of 1/2 lime
2 tbsp. cilantro, chopped
salt & pepper to taste

Rub the open faced halves of the avocado and tomato with olive oil and add some salt and pepper. Put facedown on grill until avocado flesh is tender and they have nice grill marks and until the tomato starts to blister. (About 6-7 minutes)

Scoop out the avocado from the shell into a bowl and mash with a fork. Chop roasted tomato and add to the avocado mixture.
Add the onion, pepper, lime juice, cilantro and salt and pepper and mix and mash until well combined.
Serve with chips, tacos, eggs, fish, veggies, spoons, etc. etc.

*Depending on your spice threshold will decide how much pepper you want to use and if you are careful about removing all of the seeds. I suggest doing this with a plastic bag around your hands or a napkin. Make sure to wash your hands thoroughly after handling hot peppers.
