Lobster (mushroom) mac n’ cheese


Lobster Mushrooms. Wait, what? Yup, that’s not lobster, that’s a mushroom. A lobster mushroom. Given its name rightfully.


I saw these at the farmers market for the first time a few weeks ago and was instantly curious, but scared away by the high price. These are foraged in the Northwestern U.S. in the late summer/early fall season. And thanks to foraging, they are a pretty pricy ‘shroom. But yay! Being late actually played in my favor. The vendor sold them to me for a little more than half price. I asked how he would cook them and he recommended to grill ’em just like a steak. And they do have a meaty texture and hearty flavor. Grilled with olive oil, salt & pepper would be a great addition to a salad or to top off a risotto. Or of course, a “grown-up” mac n’ cheese would work, too. I wanted to make sure that I didn’t lose the flavor of the mushrooms in the mix with all of the cheese, so this recipe leaves out the butter and milk and layers the noodles with shredded cheese and mushrooms to work with the flavors.


Lobster Mushroom Mac and Cheese

1/2 box noodles of your choice (I chose an einkorn wheat with high protein)
1/4 lb. lobster mushrooms, sliced lengthwise + olive oil
1 oz. smoked goat cheese, grated
1 oz. gruyere or gouda, grated
1 oz. parmesan, grated
1/2 tsp. red pepper flakes
1 c. arugula, baby kale, spinach or a mix
1 tbsp. olive oil
1-2 oz. grated parmesan
1-2 oz. gruyere, grated
Salt and Pepper to taste

Get to it: 

Pre-heat oven to 375 F.

In a pot, bring 2 quarts of water to a boil and empty half box of noodles. Stir occasionally until al dente, following instructions for noodles on box.

While pasta is cooking, lightly coat sliced mushrooms with olive oil, salt and pepper. Grill or pan sear 4 minutes each side. Remove from heat and chop into smaller pieces.

When pasta is done cooking, drain and add 1 oz. each grated cheese, lobster mushrooms, red pepper flakes, greens and olive oil. Combine until cheese becomes melty.

Spoon enough of the pasta mixture to cover the bottom of a casserole dish. Sprinkle top with cheese. Spoon another layer on top and sprinkle with cheese. Spoon final layer of pasta into dish and layer with remaining cheese. Place in oven and bake for 10 minutes. For the remaining 3-5 minutes, turn on the broiler and bring casserole dish to highest rack.
