Wake yo’ butt up with this protein & fiber packed caramel apple breakfast smoothie bomb. Vegan, gluten & sugar free makes this breakfast a triple threat.
So if you didn’t know I absolutely love the fall. I love going to a farm to pick apples, drink cider and wear warm sweaters and boots. But yet again my plans have been thwarted. It was 100 degrees over the weekend. But dammit I wanted to pick apples and have fall. So we trucked up to a farm 2 hours away, inland, so it was even hotter, but luckily we climbed enough vertical feet to cool off to a chilly 90. We found a quaint little farm that had apple cider doughnuts and homemade apple ice cream (topped with doughnuts), live music, BBQ, but no apple picking. So after a small ice cream and doughnut break, we headed to another farm up the road, with plenty of apples for the pickin.’ Fifteen pounds of (honeycrisp) apples later + 1 gallon of apple cider, we headed back home to head out for a birthday party. On Sunday I got to experiment with my apples. And this is where I leave you.
Vegan caramel apple breakfast bomb
1 1/2 c. non-dairy milk (almond, coconut, hemp etc.)
2 cored & chopped apples + 1 tsp cinnamon + 1/2 tsp. all spice
1 scoop natural or vanilla protein powder
1 tsp. chopped ginger
1/2 tsp. vanilla
1 1/2 tsp. cinnamon
1 tsp. all spice
3 ice cubes
2 tbsp. unsweetened apple butter
1 tbsp. non-dairy milk
1/2 c. chopped walnuts
Options for topping:
Walnuts, raisins, oats, pumpkin seeds, sunflower seeds, chia seeds, hemp seeds, coconut, pecans, almonds, etc.
Place apples in a saucepan over low-medium heat. Add cinnamon and all spice and continue to cook, stirring often, until apples become soft (about 10-15 minutes). Remove from burner and allow to cool 5 minutes.
Add apples to blender and blend remaining ingredients from milk to ice cubes until smooth. Pour into jars or bowls.
In a small bowl, stir apple butter & non-dairy milk until well combined to make the vegan caramel. Pour this evenly into bowls and swirl with spoon or spatula. Fold in chopped walnuts.
Top with desired healthy goodness.
