My Upbeet Life? More like I wanted to beat up life. I was riding the crimson wave and had to haul ass to the ladies’…big time. My completely self-less and helpful boyfriend wanted to offer me a suggestion for setting up something in my room. How DARE he?!?! I realized what was coming out of my mouth as I was saying it, and even noticed the tone. But why can’t I stop myself if I am conscious of being a raging beeotch? Hormones are some f’d up little buggers and I swear my body has gotten worse since I turned 30. It’s like it’s mad at me for not having any babies yet. After apologizing for my demon-like retort(s), I decided I needed chocolate. And that would make everything better.
I had made some chocolate treats to feature on my lovely and talented friend, Talia, at YourFitJourney, and had some leftover chocolate mix that was begging to be eaten. So into the pantry I went and found coconut, and macadamias?!?! How long had they been hiding in there for? Needless to say I was stoked and the demons were slowly beginning to exorcise themselves as I whipped this super quick and simple chocolate fix.
Chocolate coconut macadamia nuts
1/4 c. cacao powder
1/4 c. coconut oil, melted
2-3 tbsp. raw honey(not vegan) or maple syrup(not raw, but vegan)
1/2 tsp. vanilla
1 tsp. sea salt
2 tbsp. unsweetened shredded coconut
1 c. raw macadamia nuts
Whisk ingredients from cacao powder to sea salt in a medium size bowl until smooth. Fold in shredded coconut.
Toss in macadamia nuts and coat with chocolate mix. Remove with fork or spoon and lay on parchment paper. Refrigerate or freeze until chocolate is set. Keep in fridge.
