Peanut butter chocolate chunk ice cream (vegan)

There are few better food marriages than peanut butter and chocolate. And there is no better ordained minister than ice cream to bring them together for this holy matrimony. And there are no objections here today so no one has to forever hold their peace. Damn this is good. 




I told you I would be bringing the recipe to a kitchen near you. Didn’t believe me?

Peanut butter chocolate chunk ice cream

  • Servings: 2 cups
  • Time: 7mins
  • Difficulty: easy

PB chocolate chunk ice dream
1 c. clean peanut butter* (I make my own at home in minutes)
3 c. ice cubes-Freeze some coconut milk into ice cube trays and use a few (6-7) of these to help make even creamier
2-3 pitted dates
1 tsp. vanilla extract
1/2 tsp. salt if using unsalted peanut butter
1/4 c. Homemade chocolate chunks or preferred brand

Ice cream: Blend ingredients except for chocolate chunks together in a high speed blender. Fold in chocolate chips. Serve. Inhale.

*Check to make sure that peanut butter has no added sugars or oils.

I have not tried this in a food processor, but if you sub the bananas for almost all of the ice cubes, add some almond milk, and blend the mixture until it is a smoothie like consistency and place it in the freezer stirring every 30-45 minutes, I believe a tasty ice cream is in your future.

All you have to do is pour some coconut milk into ice cube makers and freeze the ice cubes. Once they’re frozen, you pop them out into a blender. Add peanut butter, chocolate, dates, and vanilla, and blend! It’s a simple, healthy, and delicious way to make ice cream with my favorite food combination in the universe!       Thanks, Stef! I have made ice cream in the vitamix with frozen bananas. The coconut ice cubes are a bit more unforgiving, but I tend to put my appliances to the test. If you try it and it works, let me know. And yes…Vitamix was the best gift to myself ever. Check out the refurbished ones. They are heaps cheaper!
