I make it to the movie theater maybe twice a year, sometimes less. Unless I go to watch Mad Max, then I go twice in one week. Soooooo intense. And Tom Hardy, what?! Who knew? WHO KNEW? And I had to take my friend who hadn’t seen it yet. Right? But, normally I prefer my movies at home. Snuggled with a blanket on my couch and some stove-top popcorn. Though I love Netflix, I really love to rent my movies from the video store down the street. Yes, this is current day I’m talking about people, not 1998. I am lucky enough to have one of these rarities that exists down the street and I love the experience of scanning the shelves and talking to the guys who work there about what they recommend. Their collection is so eclectic with the most current flicks to the most obscure foreign films. Plus, they put on movie screenings with featured speakers and trivia nights.
On to the popcorn. I have long moved on from movie sized boxes of Whoppers and Sour Patch Kids, but still needed a crunchy snack that I could nibble on without compromising my healthy eating ideals. Popcorn makes a frequent appearance at our house. Dude eats A LOT of popcorn. And when I say a lot I mean yesterday I am fairly certain he ate about 8 cups as I was experimenting in the kitchen. He must have an iron stomach and extremely good genes. Lucky dude. But I digress. So popcorn, chocolate, coconut & almonds mixed together is pretty much gonna change your life. And it’s low in sugar. BONUS! Okay, maybe it won’t change your life, but it’s definitely going to help keep you on track and feel indulgent without all the narsty ingredients in movie candy and popcorn. Dark chocolate almond joy popcorn
1 c. wide strips of unsweetened coconut
1/2 tsp. sea salt
4 c. popped popcorn (appx. 1/3 c. kernels + 1 tbsp coconut oil)
2 Tbsp. very softened coconut butter (microwave twice on 30 second increments)
1/3 c. chopped almonds
1 tbsp. coconut flour or almond meal
2 tbsp. honey or maple syrup
2 tbsp. flax seeds
1 tsp. sea salt
1/3 85% dark chocolate bar or 1/4 c. homemade chocolate chunks
Pre-heat oven to 325˚F. Spread coconut strips evenly on baking sheet and sprinkle with 1/2 tsp. sea salt. Bake for 3-4 minutes, toss, and bake for another 3 minutes, until golden brown.
Place 2-3 popcorn kernels and coconut oil in a medium pot over medium-high heat & cover. Listen for the first 2-3 kernels to pop to know that the oil is hot. Add the rest of the kernels and pop. Shake the pot continuously to mix up the kernels and get an even pop. Once you stop hearing POP, turn off the burner and remove from heat.
Add 4 c. of popped popcorn plus remaining ingredients until the 1 tsp. sea salt and mix well until the popcorn is well-coated and few to no ingredients are left out at the bottom of the bowl. Spread evenly over a baking sheet lined with parchment paper.
Melt your chocolate in a double boiler or if you have a fancy microwave setting, do it up in there. Drizzle chocolate over popcorn and refrigerate until chocolate hardens. You will get those great chunks that are like popcorn bark! Add to a bowl or nosh away!
