“This is the best thing you have ever made. No, I really mean it this time. You could sell this ish.” Hmmmmm, he’s got an idea. Maybe I shouldn’t give you guys the recipe. And maybe I should sell it. But I was always bad at keeping secrets. I like to share my creations so you lovelies can enjoy delicious healthy grub. And this is the perfect for a grab-n-go snack or add some crunch to your yogurt or top off your ice cream. GranolaDay2Above

Fresh figs. They turn me into a hoarder. I will collect fresh figs at every chance I get. Have a box at home, but see one the next day at the market? Why not pick up another? Maybe I should get 2 just in case I need to experiment with some recipes. Or just eat one each time I open the fridge. Errrrr, or walk by the fridge. But a little fig never hurt nobody.

Fig hazelnut & rosemary granola

2 c. rolled oats
1/2 c. hazelnuts, roughly chopped
1/2 c. cashews, roughly chopped
1/2 c. pecans, roughly chopped
1/2 c. shredded coconut strips
1/3 c. almond meal
1/4 c. sunflower seeds
2 tbsp. hemp seeds
3 tbsp. maple syrup
1/4 c. olive oil
2 tbsp. chopped rosemary + 2 more tablespoons to add after baking
5 dried figs, chopped
2 tbsp. cacao nibs

Pre-heat oven to 300˚F. Line a baking sheet with parchment paper. In a bowl combine all ingredients from the rolled oats to 2 tbsp. chopped rosemary and mix well until the oil and maple syrup coats all of the ingredients. Spread the granola mixture evenly on a baking sheet and bake for 15 minutes. Stir and bake for another 15 minutes, stirring the mixture with 5 minutes remaining.

And this fig nice cream. I cannot get enough. This was my breakfast after a nice long run one day. I want it. All the time.

  1. That nice cream looks heavenly! I bet it’s really refreshing after a run. And bananas are such a great post-workout snack…but eating them this way is more like a dessert 😉
