You all know that there is no right or wrong time to eat ice cream, right? That is why pumpkin ice cream was born! So we could be reminded to head out to our fave ice cream shop and grab a scoop, or two or maybe a 1/2 gallon. As if we all needed another excuse? But while Ben & Jerry’s lines may be dying down , my Vitamix keeps on pumping. Pssssst…even if you don’t have a Vitamix or ice cream maker you can still make all kinds of ice cream, especially this one which I highly recommend.

But I am much more into homemade ice creams. I can’t remember the last time I went to an ice cream shop. And I have been living a block from B & J’s and Three Twins for over 2 years and I have never been to either. That is how much I love my Vitamix ice cream. Again, main reason why I bought the machine.

This ice cream is a play on the oh-so popular banana nice cream but with some added flava flaaavvvv.  Add some spice and some bits to create a fall inspired flavor with chunks of no-bake banana bread topped with cacao nibs & a sprinkle of cinnamon.

Banana bread ice cream

No-bake banana bread bites:
1 fully ripe banana
1 c. cooked or canned garbanzo beans, drained and rinsed
1/2 c. cashews
3 pitted dates
1 1/2 tsp. coconut flour
1/2 tbsp. cinnamon
1 tsp. all spice
1/2 tsp. vanilla
1/2 tsp. salt
Add-ins: Cacao nibs (or mini chocolate chips), chopped walnuts

Mix all ingredients together in a food processor until well combined and they form a cookie dough texture. Fold in add-ins. Form into small balls or chunks and store in fridge.

Ice cream:

3 banana, peeled, chopped and frozen
1/2 tsp. vanilla
1/4 tsp. salt
Optional topping: cacao nibs (or mini chocolate chips), cinnamon

Add all ingredients to a high-speed blender or food processor and blend until smooth. Remove banana bread bites from the fridge and fold in to ice cream. Pour into bowls and top with cacao nibs & a sprinkle of cinnamon.

  2. ERHMEHGERD. YUMMMMM. Great flavor! I love how this looks super delicious but it’s only made with healthy ingredients including BEANS in the banana bread batter!?!?! I must try it!
