Ummmm, so yeah, this happened. If apples + bourbon had a love child, it would be this salted bourbon caramel apple sauce. I love to play matchmaker, especially in the kitchen. I hear a lot about food combining regarding diet, but it’s way more fun when we think of it in terms of flavors. And adding bourbon to anything in the fall for baking and a love child is bound to be born. Like this bourbon pecan pie vegan ice cream. TBH I had given up on vegan caramel sauces. They always tasted too much like coconut milk or didn’t have the right consistency for me, or took way too long and I was really too lazy to try. Plus, I really do try to eat healthy 90% of the time, and having a jar of something that resembles caramel will not be doing me any favors. But this has got all of the goods and none of the bads. There is little added sugar from maple syrup and the rest of the flavor comes from the bourbon, salt combining with the apple and spices. Throw some on top of your ice cream, make an awesome apple cheesecake or even swirl in your fave yogurt, vegan or not. But I can make a bet that you will be eating this with a spoon straight from the jar. Dooooo iiiiit.
Vegan salted caramel bourbon apple sauce
1 tbsp. vegan butter, such as Earth Balance (look for one that is non-hydrogenated)
1 c. unsweetened apple butter
1/4 c. non-dairy milk, the creamier the better
1 tbsp. maple syrup
1 tbsp. bourbon
1 tsp. high quality sea salt
1 tsp. cinnamon
1/4 tsp. cardamom
1/4 tsp. ginger
1/4 tsp. nutmeg
Heat butter in a small saucepan over medium low heat. Add remaining ingredients and bring to a low simmer, stirring continuously. Allow to simmer for 15-20 minutes, stirring every few minutes. Pour into a jar & store in fridge.
