Crispy buffalo cauliflower salad (vegan, grain-free)

Do you ever think of food as just necessary vehicles for your condiments?  Things I’ll eat of the jar or container just so crackers & bread don’t need to get in the way of their amazing taste: marinara, hummus, BBQ sauce, nutella (duh), nut butter (duh, again), salsa, guac, horseradish, and pretty much anything else you can scoop onto a chip, cracker, or veggie. (Except mustard & mayo. I’m convinced that they aren’t actually condiments, but rather the devil dressed up in disguise). And I looooove hot sauce. Used to put it on my grilled cheese for my after school snack as a kid. Weird? Maybe, but soooooo good.

And it’s just about this time of the year that I start drooling over bottles of BBQ & hot sauce at the store. And I’m obvi not gonna eat chicken wings, so I’ve taken the Prom King of veggie super bowl dishes and made it into a kick-ass salad, in case you don’t just wanna reserve the spice for Superbowl party snacks.  Why should you?

Plus, this is super duper easy to make and suits your meat lover’s needs along with your paleo and vegan friends!

Buffalo cauliflower bite salad

1 head romaine lettuce, washed and shredded

2 medium carrots, chopped
3 stalks celery, chopped
1 small slice of purple cabbage, shredded
Vegan blue cheese or non-blue cheese crumbles (Miyoko’s Kitchen is my preferred brand)
Vegan blue cheese dressing or preferred store bought brand

1 medium head cauliflower, washed & chopped into florets
1/4 c. almond flour or almond meal*
1 tsp. garlic powder
1/4 c. Frank’s buffalo style wing sauce (or other vegan brand)

Pre-heat oven to 425˚F. Toss cauliflower florets into a bowl and toss to coat with almond flour, olive oil and garlic powder. Transfer to a baking sheet in a single layer and place in oven for 15 minutes. Turn florets after 15 minutes and bake for another 5 minutes. In a bowl, combine buffalo sauce and garlic powder and set aside. Remove cauliflower from oven and coat with buffalo sauce. Place back in oven for an additional 5 minutes.
Meanwhile, prep the salad ingredients and add them to a large bowl. Remove cauliflower bites from the oven and add to salad bowl. Drizzle with preferred amount of dressing.

*Almond flour: You can grind up almonds in a food processor or blender if you don’t want to commit to buying a bag of almond flour. Alternatively look in the bulk section of your market to see if they offer almond flour. Buy it there in small quantities.

Notes: Make sure you check that the brand of hot sauce you buy is vegan!

  1. What could I use in place of almond flour due to a tree nut allergy?

      You could try chickpea flour, but I have not personally used it in this recipe, so I cannot be 100% sure that it will yield the same results, but if you try it please let me know!
