Ya know what they say, when your farmer hands you overripe guava, you roast that ish and throw it on some hummus. Okay, not really, but they should. Because have you ever roasted fruit before?

Roasted fruit hummus

Roasted kumquat + tropical fruit white bean hummus

8-10 kumquats
1 small guava, or 1/2 mango or 1/2 c. pineapple
1 can cannelini beans
1/4 c. tahini
2 tbsp. olive oil
2 -3 kumquats
1 medium garlic clove
2 tbsp. chopped thyme
S & P to taste
Optional: hemp seeds or sunflower seeds

Preheat oven to 375˚F. Slice kumquats and dice tropical fruit. Place on an oiled baking sheet and bake for 10 minutes. Turn broiler on to low and broil for another 2-3 minutes. (This helps caramelize the fruit!).
Add remaining ingredients to a blender or food processor and blend until smooth. Top with roasted fruit, thyme, and hemp/sunflower seeds, if using.
