Skillet eggplant “rib” BBQ mushrooms tacos (vegan, gf)

Let’s be real here for a minute. Tacos are pretty much  most definitely the perfect food. For anyone and everyone. Tacos do not discriminate. No matter what your diet or what kind of food you wanna throw in them, the tortilla makes for a perfect vehicle for whatever you feel like eating.

But until then I will leave you with these smoky BBQ “rib” tacos. The trick is to get the eggplant nice and tender, so they pull apart really easily.

BBQ Eggplant Rib Tacos

1/2 yellow onion, sliced
1 medium eggplant, diced
2 portobello caps, stems removed and sliced
1/2 c. BBQ sauce
Corn tortillas
1 large avocado
Garnish with: cilantro, cabbage, radishes, serrano pepper, lime, pepitas, pomegranate seeds

Coat an oven proof skillet with olive oil and heat over medium heat. Add in onion and cook 5-6 minutes, until tender. Add eggplant and cover. Cook for 10 minutes or until tender, stirring occasionally. Add in portobello caps and cook for another 5-6 minutes, covered.  Add BBQ sauce and stir.  Turn on broiler to normal or high, if your oven doesn’t have a normal setting. Remove skillet from heat and place on highest rack under the broiler for 3-4 minutes. Remove from oven. Assemble tacos!

  2. Your directions never mention when to add in the BBQ sauce. Is it cooked in it, broiled in it, or added after?

      Good catch! I fixed it in the recipe. You can add the BBQ sauce after the porotbellos are done cooking!
