Chocolate peanut butter donuts + salted PB glaze (vegan, GF)

“Mmmmmm donuts. Mmmmmmm chocolate. Mmmmmmm chocolate and peanut butter donuts. Mmmmmmm salted peanut butter glaze.” This was my thought process on making these donuts. I had done a chocolate peanut butter donut way back that got a crazy response on social media, but I never nailed down a recipe. In comes a month of weddings out of state and out of the country and in comes my crazy “need to use all of our food so it doesn’t go to waste” bakeathons and cookathons. I’m pretty sure I have made about 324 baked goods this past week. (And yes, I gave most of those away). But these donuts take the cake. Errr donuts?


Not to mention we have to have our house fumigated for termites. Sexy, I know. So all the foods need to be removed or bagged. I choose removed. I don’t play around when it comes to my food. Well, I do play with my food, but only for artistic purposes. Which I did a lot with these little doughnts. So I posted the recipe below and then a million pictures if you wish to feast your eyes first.


Chocolate peanut butter donuts + salted peanut butter glaze

  • Servings: 18 mini doughnuts

1 1/2 c. teff flour
1 c. unsweetened non-dairy milk
3/4 c. creamy peanut butter
1/2 c. cacao powder
1/4 c. melted coconut oil
1/4 c. liquid sweetener
1/2 tsp. baking soda
1/4 tsp. salt
Optional: 1/4 c. vegan chocolate chips


2 tbsp. salted creamy peanut butter
2 tbsp. PB powder such as Santa Cruz, PB Fit, or JustGreatStuffย or sub with regular PB
1/2 c. water (reduce to 1/3 c. if subbing regular PB for PB powder)
1 tbsp. melted coconut oil
1 tsp. liquid sweetener (optional)
1/4 tsp. salt

Preheat oven to 350หšF and grease a donut pan with coconut oil. Whisk together all ingredients in a bowl until well combined. If using, fold in chocolate chips. The batter will be similar to a cookie dough. Using two spoons, scoop batter into the doughnut molds and smooth out over the top with the back of the spoon. Bake for 10 minutes. Allow to cool before removing from pan.

Whisk together all glaze ingredients together in a bowl. Dip donuts in glaze and refrigerate for 30 minutes for glaze to set or 1 hour on the counter. Top with cacao nibs, if desired.
