This is the first of my new series while we are out traveling. We want to enjoy ourselves fully while we travel and enjoy our fun foods, but also be able to keep up the energy that’s needed for you to go for a hike, jump in the ocean or continue your marathon training while getting some R & R. No need to compromise your health while you’re away from home. No one wants a hangover, especially one from eating too much junk food. I’m not telling you to skip dessert or refrain from snacking! I would never! But I can tell within a day or two if I’ve fallen too deep down the rabbit hole of vacation bliss and indulgence.
We’ve always been told that breakfast was the most important meal of the day. And I firmly believe that having a breakfast to look forward to makes looking forward to the next day even better. And overnight oats is a breakfast that you can do anywhere. I love it for camping or for when I have no access to a kitchen or am just too lazy to want to make breakfast in the morning. Hey! I’m on vacation, too!
Super easy peasy no-recipe oats. While traveling I don’t have any measuring cups or bowls, but instead use my eyeball and some very sexy clear plastic Tupperware containers (woohoo lids). Not a food blogger’s dream, but hey I’ll make it work.

1/2 c. rolled oats (or determine how much you want for breakkie)
Almond or other non-dairy milk (enough to just cover your mixture)
1-2 tbsp. chia seeds
Seasonal fruit, nut butters, pumpkin seeds, dried fruit, coconut, sunflower seeds, etc.
Mix together the oats, chia and cinnamon in a bowl, jar, or container. Add in the almond milk and stir. Stir in nut butter if using. Cover and refrigerate overnight. Top with extra toppings in the morning and enjoy!
