Naturally Nourished Travel Series: No-bake PB chocolate chip oatmeal cookies

Some days ya just need a cookie. And some days ya just need to eat a ton of cookie dough and leave the remaining cookies for others to eat. Amiright?

Before coming to Thailand we had been camping for the previous several weeks through the Wild Coast of South Africa & Botswana. We’ve been using some pretty rudimentary kitchen equipment and yet we’ve been able to maintain a plant-based diet so we’re pretty happy with how we’ve been feeling. And let’s not forget the treats, too! I was having a real hankering for some cookie dough and luckily we had all the ingredients on hand while at one gorgeous campground where the closest grocery store was an hour away. Things could have gone very badly if I hadn’t come prepared. 

This is all eyeballed as we don’t have any measuring cups or spoons but you can see if you need to add any more ingredients by testing how easily they form into a ball.

No-bake PB chocolate chip oatmeal cookies

2 c rolled oats
1/2 c natural peanut butter*
1-2 tbsp chia seeds
1 tbsp oil (safflower, coconut or even olive oik works)
3-4 tbsp honey or maple syrup
2 oz dark chocolate bar, finely chopped

Combine all ingredients excluding the chocolate in a medium bowl. Fold in chocolate chips.
Scoop a spoonful of the mixture into hands and mold into a rough shaped ball. Place onto a plate or other surfave area you have available. Store in an airtight container or wrap with aluminum foil.

*if your peanut butter is the “need to stir” your consistency will come out much better. If not place it in a saucepan over medium to low heat with the sweetener of choice and melt, stirring consistently until a bit runny.
